Campaigns and awareness More Gifts for your Gut Nutritious Mince Pies Nutritious Mince Pies: Ingredients Makes 10 Dry Ingredients: 250g ground almond flour 50g coconut flour 1 tablespoon of coconut sugar Pinch of salt 0.5 teaspoon of baking powder Wet ingredients: Zest of a large orange 12 tablespoons melted coconut oil (suggestion: approximately half a 250ml jar of Vita Coco cold pressed organic oil) 1 free-range/ organic egg Mincemeat: 1/2 jar apple puree 200g or 2 apples 120g Raisins 120g Sultanas Juice from the orange (1 or 2) 1 tablespoon sweetener (i.e. coconut sugar) 1/2 teaspoon of each: nutmeg, ginger & cinnamon Nutritious Mince Pies: Method 1. Pre heat the oven to 180*c & grease the non-stick muffin tins with coconut oil. 2. Make the mince: Combine all the ingredients into a sauce pan and let simmer, stirring occasionally on a low heat for approximately 30 minutes, add more orange juice or water if the mix gets too thick. 3. To make the pastry, combine thoroughly all the dry ingredients followed by the wet. Add the melted coconut oil slowly until it forms a dough consistency, it may seem a little crumbly so keep mixing and pressing it together until there is no flour powder left, or if you wish you can use a food processor to combine. Then use your hands at the end to bind together into 2 large balls. 4. On a dry surface, cover with a little extra coconut flour and roll out one of the balls (using a rolling pin) to your desired thickness approximately 1cm then using a glass rim or cutter, cut out as many circle as you can. Use a thin flat spatula to carefully placing each one into the muffin tray - this helps to prevent it breaking, due to their not being any gluten and grains the mix is very delicate and can brake easily. If this happens simply press it back together so the base is firm and you can add to the edges if desired using the pastry scraps, then repeat with the second dough ball. Leave some dough as extra for the topping. 5. Fill each pasty base with a few spoonfuls of mince to the top, then with the remaining dough, cut out shapes or as I did a few crossed lines. You can use coconut oil or a little water to glue down. 6. Bake in the oven for approximately 15 minutes/ until go golden brown.
