Mince Pies: Ingredients for the mince

2 braeburn apples

70g cranberries

70g sultanas

70g raisins

2 tsp cinnamon powder

1 tsp mixed spice

Generous dash of cloves

Pinch of all spice

Juice of 2 oranges

Mince Pies: Ingredients for the pastry

1 1/2 cups chestnut flour 

3/4 cup buckwheat flour 

1 tbsp tapioca flour

2 eggs

2 tbsp melted coconut oil

1 tsp cinnamon

1 tsp mixed spice

1/2 tsp vanilla powder

1 tbsp honey/ maple syrup 

Coconut oil for greasing

Mince Pies: Method for the filling

  1. Preheat the oven to 180°C. 

  2. Chop the apples into small squares, add them to a saucepan with all the mince ingredients and cover.

  3. Place over a low heat for around 25-30 minutes, until the juice has been absorbed and all the fruit is soft. 

Mince Pies: Method for the pastry

  1. Sift the chestnut flour, buckwheat flour, tapioca flour, cinnamon, vanilla powder, honey/ maple syrup and mixed spice into a bowl and combine. 

  2. Add the eggs and the coconut oil to a separate bowl and mix well. Then pour into the dry ingredients and mix well until a dough texture forms. 

  3. Roll out the mix into circles, grease a tart tin with coconut oil and push the dough circles into the tart cases. Bake for 6 minutes. Ensure you leave some dough to cover the pies. 

  4. With the remaining dough, cut out star shapes to top the pies.

  5. Remove from the oven and fill with 1-2 tsp of mince per pie.

  6. Top with the stars and return to the oven for 5 minutes.
