This desert uses various spices that have been associated with good gut health, including cinnamon which is high in chromium, which helps to balance blood sugar levels and our hunger hormones. If you have a sweet tooth but struggle to find a pudding that agrees with you, this could be the answer.

Chromium Chromium -- is an essential trace element that's used by some people as a supplement. Perhaps most importantly, chromium forms a compound in the body that seems to enhance the effects of insulin and lower glucose levels. However it can have negative effects if consumed in high levels.

Jenna's Christmas spiced cashew ice cream ingredients

2 cups of raw cashews

150ml freshly squeezed orange juice

2tbsp maple syrup

1 1/2tsp ground cinnamon

1/8tsp ground cloves

1tsp mixed spice

1/2tsp ground all spice

1/4tsp ground nutmeg

1/2tsp vanilla powder (you can substitute this for extract)

Optional toppings:

50g dark chocolate (I used Ombar)

1tbsp dried goji berries

1tbsp flaked almonds

1tsp bee pollen

How to make Jenna's Christmas spiced cashew ice cream

Soak the cashews in water for 6-8 hours or over night.

Drain the cashews and add them to a high speed blender. Gradually pour in the orange juice. Add the maple syrup and blend until smooth.

Add the cinnamon, cloves, mixed spice, all spice, nutmeg and vanilla and blend until smooth.

Pour the mix into into a lined bowl or loaf tin and place in the freezer for 4-6 hours.

Once frozen remove from the freezer. Heat the chocolate over a bain-marie (on a low light) until melted.

Drizzle the chocolate over the ice cream and top with the goji berries, flaked almonds and bee pollen. (Note: work quickly here so the ice cream does not melt).

Either serve immediately or return to the freezer until ready to serve.
