Frankie's mince pie french toast ingredients

Prep time: Cook time: 10 minutes                     Ready in: 20 minutes
Serves one to four people
  • 4 tablespoons mincemeat (I used Aldi’s)
  • Icing sugar to serve
  • 4 tablespoons butter
  • ¼ teaspoon vanilla
  • ½ teaspoon cinnamon
  • 4 slices white bread
  • 2 eggs (I used Orgran egg replacer)
  • ½ cup almond milk
  • ⅓ cup gluten free flour
  • ¼ teaspoon vanilla
  • ½ teaspoon cinnamon
  • Optional: syrup for topping

How to make Frankie's mince pie french toast

  1. In a large, wide bowl whisk together eggs, vanilla, milk, and cinnamon. Stir in flour and whisk until smooth.
  2. Completely submerge one slice of bread in the mixture, careful to coat both sides. Lift the bread out of the liquid and allow to drip off excess.
  3. Place one slice of bread into the toastie maker and spoon on 2 tablespoons of mincemeat. Then cover with another slice of bread.
  4. Cook toast in a toastie maker for 2-3 minutes until golden (or alternatively a large pan over medium heat 1-2 minutes until lightly browned, then flip and cook other side 1-2 minutes).
  5. Repeat with remaining bread slices. Generously top toasts with more mincemeat mixture. Sprinkle with icing sugar if desired, and enjoy while still warm!
