This recipe is loaded with health benefits, thanks to the turmeric (which fights inflammation), cinnamon (balances blood sugar) and ginger (soothes the stomach). Oats are an excellent source of fibre, which becomes more easily digestible when soaked overnight. Prepare this recipe the night before for a delicious grab-and-go breakfast that will keep you feeling satisfied until lunch!

  • 1/3 cup rolled oats
  • 1/4 cup water
  • 1/2 cup almond milk
  • ½ ripe banana, mashed
  • 1 teaspoon ground turmeric
  • 1/2 teaspoon ground cinnamon
  • 1 teaspoon ground ginger
  • Optional: 1-2 teaspoons honey

How to make Eli's golden overnight oats

  1. Combine all ingredients in a bowl and mix well.
  2. Cover and leave to sit in the fridge overnight.
  3. In the morning, simply add your favourite toppings – I love adding fruit and a squeeze of honey for a little extra sweetness.
